Ready for Delicious Gajar Halwa?

GAJAR HALWA RECIPE
Preparation Time: 15Min
Cooking Time:1hr 45Min
Serves: 5-6

Gajar halwa - a traditional slow cooked recipe of carrot halwa with just carrots, milk, ghee, sugar and a few dry fruits.


INGREDIENTS (MEASURING CUP USED, 1 CUP = 250 ML)

  • 8 to 9 medium tender juicy carrots/gajar - yields approx 4 to 4.5 cups grated carrots
  • 4 cups full fat organic milk
  • 4 tbsp ghee/clarified butter
  • 10 to 12 tbsp organic unrefined cane sugar or regular sugar or as required
  • 20-25 whole cashews/kaju
  • 5 to 6 green cardamom/chotti elachi, powdered finely in a mortar-pestle or about ⅓ tsp cardamom powder
  • a pinch of saffron strands/kesar (optional)
  • handful of golden raisins


INSTRUCTIONS
  1. rinse, peel and grate the carrots.
  2. in a kadai or deep thick bottomed pan combine milk and grated carrots.
  3. on a low to medium flame, bring the whole mixture to a boil and then simmer.
  4. while the mixture is simmering on a low flame, keep on stirring in between.
  5. the grated carrots will cook in the milk and the milk will start to reduce and evaporate.
  6. when the milk has 75% reduced, add the ghee, sugar and powdered cardamom to the mixture.
  7. stir well and continue to simmer and cook on a low flame.
  8. do keep on stirring the gajar halwa in between.
  9. towards the end, add the cashews, crushed saffron and raisins and simmer till all the milk is evaporated. switch off the burner.
  10. serve gajar halwa hot, warm or you can also serve it cold.

  • Add in 1 cup of chopped vegetables such as broccoli, tomatoes, squash, onions, or peppers, while removing 1 cup of the rice or pasta in your favorite dish. The dish with the vegetables will be just as satisfying but have fewer calories than the same amount of the original version.
  • Take a good look at your dinner plate. Vegetables, fruit, and whole grains should take up the largest portion of your plate. If they do not, replace some of the meat, cheese, white pasta, or rice with legumes, steamed broccoli, asparagus, greens, or another favorite vegetable. This will reduce the total calories in your meal without reducing the amount of food you eat. BUT remember to use a normal- or small-size plate — not a platter. The total number of calories that you eat counts, even if a good proportion of them come from fruits and vegetables.

Easy Home made -Mouthwatering Strawberry sugar biscuit Triffle


             Strawberry-Sugar Biscuit Trifle


Ingredients

  • Sugar Biscuits
  • 6 tablespoons orange liqueur or orange juice, divided 
  • 2 1/2 pounds strawberries, halved
  • Trifle Custard
  • 1 1/2 cups whipping cream 
  • 1/4 cup plus 2 tablespoons powdered sugar 
  • Garnishes: strawberries, mint leaves

Preparation

Cut Sugar Biscuits in half; brush cut sides evenly with 5 tablespoons orange liqueur.
Line bottom of a 4-quart bowl or trifle bowl with eight Sugar Biscuit halves. Arrange strawberry halves around lower edge of bowl. Spoon one-third of Trifle Custard evenly over Sugar Biscuit halves; top with one-third of remaining strawberry halves. Repeat layers twice, ending with strawberry layer. Drizzle remaining orange liqueur evenly over top. Cover and chill 3 to 4 hours.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Spread over trifle; serve immediately. Garnish, if desired.

           With all the happiness in their life, there is some serious tragedy, " Dhanno ka toh thik hai, ghas kha ke khush hai BUT Thakur ke bahot nakhare hai ", the old man wants to eat a new dish everyday.
Frustrated Basanti goes to old Thakur to get answers.
Basanti: Thakurji, you tell me! I am tired of your demands for new dishes everyday. You have to get the vegetables for your demands or just tell me where to buy fresh, affordable vegetables and fruits. Ab mousi bhi nahi hai.
